An old can tempted our columnist to a delicious bowl of laksa. The recipe for the noodle soup with coconut and chili from Malaysia can be found here.

This recipe starts with an old can of coconut milk in the back of my pantry. Already expired. At this point I would have liked to tell you how an old woman, gray hair, lovely smile, invited me to her hut in Kuala Lumpur and cooked me the dish of my life in a bubbling wok. Instead, I can only offer you an expired coconut milk – and the question: What do I do with it? Throw away? Under no circumstance. The solution is Laksa. This is a noodle soup based on coconut milk and chili that is common in Malaysia.
